Hibernia Restaurant was started in 1987 when Raoul Rodriguez and Mary Pat O'Hanlon moved to Anguilla.

Raoul, who has represented Anguilla on an international level, has formal training from the Ecole Hoteliere of Strasbourg, France, and cooking schools in Laos, Thailand and Hong Kong. He creates French/Asian dishes using the freshest local seafood, high quality meats imported from the US and France and little known Asian products, discovered during their annual travels in Asia.
Mary Pat runs the dining room, and will advise you on the menu and Hibernia's extensive wine selection. The wines are purchased personally in France from their favourite wine producers.
The expanded wine celler is the latest construction effort
of Hibernia. Once it was completed, Raoul and Mary Pat had to
travel to France and select the wines to fill it
(tasting hundreds of wines in the process).
They aim for a unique selection that will enhance the experience of
your meal. Their new cellar is stocked with over a 100 different wines
to make your choice an enjoyable one.
For inspiration, Mary Pat and Raoul travel world-wide annually for two months. They use this experience to make changes in the restaurant and create a new menu.
As well as serving dinner, Hibernia also offers the same menu at lunch; the perfect stop-off point when touring the island, come and experience their breath-taking view and coincide a visit to Hibernia's art gallery, specializing in southeast Asian and Eastern European contemporary art.
